Fatty Acids

In chemistry, especially biochemistry, a fatty acid is a carboxylic acid often with a long unbranched aliphatic tail (chain), which is either saturated or unsaturated. Carboxylic acids as short as butyric acid (4 carbon atoms) are considered to be fatty acids, while fatty acids derived from natural fats and oils may be assumed to have at least 8 carbon atoms, e.g. caprylic acid (octanoic acid). Most of the natural fatty acids have an even number of carbon atoms, because their biosynthesis involves acetyl-CoA, a coenzyme carrying a two-carbon-atom group.

Fish oils, also known as marine oils, are lipids found in fish, particularly cold water fish, and other marine life such as phytoplankton. These oils are rich sources of long-chain polyunsaturated fatty acids (LCPUFA) of the n-3 (omega-3) type. The two most studied fish oils are the 20 carbon eicosapentaenoic acid (EPA; C20:5n-3) and the 22-carbon docosahexaenoic acid (DHA; C22:6n-3). EPA contains five double bonds and DHA, six double bonds. These double bonds are all in the cis configuration. DHA is a vital component of the phospholipids of human cellular membranes, especially those in the brain and retina.

EPA and DHA have several actions in a number of body systems. EPA and DHA lower elevated triglyceride levels. EPA and DHA are beneficial for the musculoskeletal, gastrointestinal and immune systems. EPA and DHA are also important for maintenance of normal blood flow. DHA is vital for normal brain development for the fetus and infant and for the maintenance of normal brain function throughout life. DHA appears to be a major determinant of membrane fluidity in brain cells, and this could play a major role in the maintenance of normal cognition and mood.
